All sirap (syrup) in Sweden is manufactured by Danisco Sugar AB and sold under the brand name Dansukker.
Although Sweden's first sugar refinery was opened in Stockholm in 1647, sugar was originally a luxury good only enjoyed by the aristocracy. By the late 1800s most Swedes had started to enjoy sugar and syrups and so at the start of the 20th century there were 10 sugar refineries in Sweden. In 1907 they formed a company, Svenska Sockerfabriks AB (SSA). In 1987 the company changed its name to Sockerbolaget AB and in 1995 the name was changed again, this time to Danisco Sugar AB. In 2000 the brand name for consumers changed to Dansukker.
Two types of sirap
Swedes have a choice of ljus sirap (light syrup) or mörk sirap (dark syrup).
Both types of Swedish sirap is made from sugar beet. They are slightly different to most other syrups sold around the world. If you want the pucker product you can buy sirap in specialist shops or online.
Lyle's Golden syrup
Lyle's Golden Syrup can be used in place of ljus sirap. Golden Syrup is made using a different process and it is slightly thicker than ljus sirap, but in most recipes it is hard to tell the difference.
Lyle's Black Treacle
Lyle's Black Treacle has a much more pronounced flavour and is thicker than mörk sirap. If you can't get mörk sirap it is better to replace it with a 50:50 mixture of Golden Syrup and Black Treacle.
Molasses is not quite as sweet as mörk sirap, but the taste is normally close enough to be a good substitute if mixed with some golden syrup, say 75% molasses and 25% syrup.
Maple syrup is much more expensive than sirap and has a more pronounced flavour. It can occasionally be used as a substitute if only a small quantity is required, but it will alter the flavour of the final product.
Corn syrups should only be used as a substitute for sirap as a last result as corn syrups are too thin and have a different flavour.
