Pearl sugar

Pearl sugar is used for decorating cakes, biscuits and buns, most notably for decorating kanelbullar (cinnamon buns). It is also sometimes called nibbed sugar or hail sugar.

Pearl sugar is a product of refined white sugar. The sugar is very coarse, hard, opaque white, and does not melt when baked.

It can be bought at specialist bakery shops, Swedish food shops and online. If you can't find any you can sprinkle normal caster sugar (superfine) sugar on instead and some perhaps some flaked almonds (almond slivers). It will not look quite as pretty, but it will give the crispy sugary effect and the almonds will give a bit of crunch.
