Epice riche is an unusual spice mix that is used in some Swedish dishes. Although widely sold in Sweden it is not really sold anywhere else and there isn't really a direct equivalent in other countries.
As epice riche is a complex mixture of herbs and spices it is not really realistic to make it at home. The mixture normally consists of marjoram, thyme, basil, oregano, tarragon, sage, allspice, black pepper, fennel, cumin and cloves. The exact proportions vary from one supplier to another.
A simple mixture to substitute is to grind the following:
- 2 tsp whole white pepper corns
- 1 tsp whole allspice
- 8 whole cloves
Then stir in 2 teaspoons of freshly ground nutmeg into the mixture. Epice riche will keep well in a spice jar.
